Since its inception, I have shaped JADEM Restaurant’s gastronomic concept, culinary vision, and menu architecture—a process strengthened by a collaborative working culture shared with my esteemed colleague, Chef Murat Taşdemir. Situated in the heart of Bodrum, we are now entering our third season with a distinctive gastronomic approach that blends the unique character and culinary heritage of the Aegean.
Chef Murat Taşdemir has been meticulously and successfully managing our culinary operations in line with the concept I established from day one. We extend our thanks to Mr. İsmail Terzi—a successful businessperson and investor in the maritime sector—for his vision and contributions; he has played a pivotal role in establishing JADEM as a strong brand in Bodrum. JADEM’s culinary philosophy is:
• The freshness of Aegean cuisine,
• The lightness of the Mediterranean,
• Modern touches of Greek coastal cuisine,
• And the rich meze tradition of Turkish cuisine.
My dedication to Turkish cuisine and my expertise in meze culture have been internationally recognized through the creation of 1,515 varieties of meze—an achievement that earned a place in the Guinness World Records in 2010. This wealth of experience lends a modern identity to JADEM’s approach to meze and appetizer culture.
JADEM’s gastronomic identity draws inspiration from Aegean-Mediterranean cuisine, the "new-generation meyhane" (modern tavern) ethos, and contemporary seafood restaurant concepts. This culinary approach creates a character that harmonizes with both the spirit of the region and modern dining trends.
We will continue to enrich Bodrum’s social scene through special events and themed evenings throughout the season.
